nexus: Use opt_prefix
Cleaning up places that can use `opt_prefix` instead of
`#{HOMEBREW_PREFIX}/opt/<packagename>`
This package had a hardcoded `/usr/local/` instead of a
Homebrew path in the .plist file.
Closes #22079.
